There are a lot of different cuts of meat that you can choose from. Some tender meats are guaranteed to be cooked as quickly as possible and full of flavors if appropriately braised.

Two of the best cuts in the market you can choose from are a pork steak and a pork chop. What is the difference between them? What are the things that you need to consider when choosing the best cut you will prepare? In this article, we will discuss the difference between the two of them and the benefits you can get from each cut.

What is Pork Steak?

A pork steak, also known as a Boston Butt or pork blade steak, is a type of steak thinly sliced from the pig’s shoulder. It is a tough steak since it is considered as a hard-working cut of pork. The pork steak contains the blade bone, and it is quite flavorful because it is rich in marbling, which will keep the cut tender during grilling.

When grilling or cooking the pork steak, you must make sure that it will not be overcooked since it will then become dry and tough. Please give it a three-minute rest after cooking so that the juice will penetrate the meat and will make it juicier and more tender.

Cooking Pork Steak

There are a lot of ways that you can do it when you are going to cook a pork steak. You can braise it, grill, or any other quick-cooking methods that you know. You do not even need to tenderize the pork steak; all you need to do not to overcook it. Usually, a pork steak will only have seven to eight minutes of cooking time when put over medium-high heat.

Take note also that you only need to place one steak at a time on the pan. If more steaks are being placed in the pan when cooking, it can result in unevenly cooked meat and may cause some parts of the steaks not to be seared.

What is a Pork Chop?

A pork chop is a loin cut which is from the spine of the pig. This cut usually contains the rib or a part of a vertebra. It is one of the most consumed meats as it is easy to prepare and can be served individually.

It has different variations; one is the blade chops, from the shoulder of a pig that contains a generous amount of fats and connective tissues. Another is the rib chop, which is from the shoulder to the middle of the loin. The loin chop is from the hip and loin toward the back part of the pig, and it is very lean.

Make sure that you are not going to overcook the pork chop as this will turn the meat tougher. You need to choose a thicker type of pork chop so that it will not be overcooked. Brining will also help in adding flavor to the meat. It will also help in keeping the meat moist while cooking.

Choose also the pork chop with attached bone as this helps it from overcooking, and the fat around the bone will also keep the meat juicier and more flavorful.

How to Choose from Pork Steak and Pork Chop

If you decide that you will grill the meat, you will need to buy a pork steak, since it has a lot of fat on its meat. The juice of the fat will add more flavor to the meat while grilling. Pork chops, specifically the loin chop, have a lot of fat on it but is still lesser compared to the fat attached to the pork steak.

It would be best if you also took note of the price of the cuts you are going to purchase. If you are on a tight budget, then the pork steak is the best choice for you.
